NC - 2010

A few weeks ago (over my actual birthday - August 7th!) We visited Matt and Julie Simon in Charlotte, North Carolina. Paul's brother and sister-in-law have been living there for about 3 years and are loving it! Being newlyweds ourselves, we've been busy and haven't got the chance to visit yet. So, since Matt was graduating from his Masters program this gave us the opportunity to go visit and spend a quick weekend together. Paul's folks also came down for the weekend so it was a big Simon family weekend ;-)

Congrats Matt!! And thanks to Matt and Julie for being such great hosts! Can't wait to have you in Dallas next!

The BIG 28 ;-)

A few weeks ago I turned the BIG 28... it was in the middle of a crazy August for us...(Anniversary, Birthday, trip to N.C...whoa!) But we managed to get in a little celebrating and plenty of presents surrounded me! So excited for the presents!

We went out with friends to the Shops of Legacy and Paul reserved a room at the Gingerman to party a little ;-) We had plenty of speciality beers (wine for me!) and ordered a few wine and cheese platters to nosh on. Several people came out to wish me a happy day and I loved catching up with everyone! Love you all! And a big thanks to my hubby for putting it all together! love ya babe!

As I looked around the room I had a couple thoughts... one, how blessed I am to have such amazing people around me! Two, what a grown-up party this was! Just a few years ago we were ringing in my 21st at the sorority house on 14th street with frat boys running through my bedroom onto the roof! Times are changing and we are getting older... yes, older! My friends are having kids, I'm getting closer to 30, we have a mortgage now, so many responsibilities! Although, a party with frat boys for old times sake would be fun ;-)

Our 3rd Anniversary


This year for our anniversary Paul surprised me with a night downtown at Hotel Palomar!!! It was absolutely lovely! We checked in and while we were getting all dolled up for dinner room service arrived? hmm... we didn't order anything? It was champange and chocolate covered strawberries with a note from chef Blythe Beck from the restaurant we were going to that evening! How sweet! At that point "the cat was outta the bag" I knew we were going to Central 214 for dinner! Chef Blythe had a TV show on Oxygen, "Naughty Chef" and is a well-known chef here in Dallas.


We arrived down at the restaurant a few mins before our reservation and had a pre-dinner cocktail at the bar. I loved just taking everything in...reminiscing over the last 3 years together with my fabulous husband. I love him more each day!
We were escorted to our table were Chef Bylthe came to our table and announced she had prepared a special 5 course meal for us! How exciting! (Way to go Paulie!) We enjoyed deviled eggs, scallops, greek salad, gazpacho, lamb, and an upside-down keylime pie dessert! Everything was delicious and we were sooooo full! We finished our wine outside by the fireplace looking at the stars for a while before calling it a night.
What a beautiful evening together...I love my hubby!

National Tequila Day - July 24th

A few weeks ago we hosted an impromptu outdoor barbeque inspired by National Tequila Day! We couldn't let this special day go by without giving it a special celebration ;-) Of course, this is Paul's FAVORITE liquor!

We enjoyed several margaritas made with some favorites - Jose, Cabo, and Patron. Paul always has plenty of tequila on hand!

Gotta love an excuse to drink margaritas and lay by the pool all day! However, Milo and our friends little 3 month old were the biggest hits of the party! SOOO CUTE!!!
